21 Day Fix Crockpot Chicken Fajitas

This recipe is ridiculously easy and even more ridiculously delicious! Usually when I find a recipe that's this easy to make and is this healthy for you no way my kids will eat it, but they tore this dinner up! I usually have leftovers for my lunch the next day or to take to work for my dinner, but not this time. Give it a try and let me know what you think.

INGREDIENTS:
1- each red, green, yellow pepper sliced into stripes ( or take the easier way and buy 2 bags of cut up peppers and onions, I'm all about saving time what can I say).
1- medium yellow onion cut into slices ( leave out if you use the bags with the onion in it).
1- pkt or 2 tbsp taco seasonings 
1-lb raw boneless, skinless chicken breast
1-10 oz can diced tomatoes with green chilles 
1- pkt of whole wheat tortilla 

COOKING IT UP: 
Layer ingredients in the crockpot starting with 1/2 the peppers or 1 bag then place the chicken on top ( after the chicken has  been washed and dried), sprinkle 1/2 the pkt or 1 tbsp of taco seasoning on one side of chicken use tongs flip the chicken and sprinkle the rest of the taco seasoning on the other side, now cover the chicken with the can of diced tomatoes, then the onions, if you didn't use bags, last finish off with the remaining peppers or the last bag of peppers. Cover with lid and cook on low for 6-8 hours. You can warm your tortilla up on the stove top or eat them as is. Fill each tortilla with 3/4-1 cup of chicken mixture. 
 Makes 8 servings
