21 Day Fix Brussels Sprouts & Grilled Lemon Chicken

TO PURCHASE THE 21 DAY FIX

BRUSSELS SPROUTS & GRILLED LEMON CHICKEN


Ingredients


  • 1 1/2 pounds Brussels sprouts
  • 3 tablespoons good olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper


Directions

.Preheat oven to 400 degrees F.

Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl

with the olive oil, salt and pepper. Pour them on a sheet pan and roast for 35 to 40 minutes, until crisp

 on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly.

 Sprinkle with more kosher salt ( I like these salty like French fries), and serve immediately.

MAKES 6 SERVINGS 1-GREEN 109 CALORIES PER SERVING

GRILLED CHICKEN


  • 6   Boneless, skinless chicken breast
  • 1/4 cup lemon pepper
  • 1 Tbsp dry mustard
  • 1 Tbsp dried rosemary
  • 4 cloves garlic, crushed
  • 4 Tbsp fresh lemon juice
  • 3 cups dry white wine

DIRECTIONS

  1. In a small bowl, mix lemon pepper, dry mustard and crushed dried rosemary.
  2. Place chicken breast in a medium bowl. Rub with garlic. Introduce the lemon pepper mixture and rub it into the chicken. Pour in lemon juice and dry white wine. Cover and refrigerate at least 3 hours before grilling.
  3. Preheat an outdoor grill for high heat and lightly oil grate. (Or fire up your George Foreman Grill).
  4. Cook marinated chicken breasts on the prepared grill until meat is no longer pink and juices run clear, or to desired doneness. (George Foreman grill  about 5 minutes.)
serves 6 or 1-Red

Tip
Aluminum foil helps keep the food moist, ensures it cooks evenly, keeps leftovers fresh, and makes clean-up easy;)

Love Those killer workouts? But Do you know When To Go Hard and When To Go Home?

Good morning my beautiful people! I am on day 3 of the 21 Day Fix Extreme and I've yet to be able to do a workout. I've had bronchitis for the last 12 days, so I haven't been able to workout, but today I'm feeling better and I think I'm gonna give it a try. If I survive I'll let you know how it

Part of losing weight and getting fit is knowing when to push your body and when to lay off. You have to ask yourself when the workouts are getting tough and you "feel" like you're going to die "Am I feeling this way because I'm so out of shape and this is something new and challenging for my body?" OR "Is this a legit distress and I need to back off or stop, so I don't get hurt or injured?" You know you and you know if you're just being a weenie and not wanting to push yourself to finish or even start the workout, because "I'm to sore from yesterdays workout". On the same coin you know if you're being stubborn and pushing threw the pain just so you can say you finished.

Peeps, it's important to push yourself to SHOW UP everyday for your workout. And when you show up you give it all you got and leave it all on the workout floor. It's okay to modify the moves if you can't do them, just try to keep in time with the class and do a move that works the same body part/muscle group as the move you are modifying. But it is not alright to half ass it because "it's just to hard", NO ONE told you this was going to be easy. WORKING OUT, LOSING WEIGHT, GETTING FIT IS HARD. BEING OVER WEIGHT & MORBIDLY OBESE IS HARD. PICK YOUR HARD!

But don't be stubborn and keep pushing yourself when you know the pain you are feel is not a normal pain. You've been hauling that extra weight around for sometime now, so you know your aches and pains and the ones that come with activity and when there is a different pain DO NOT IGNORE IT! You can do permanent damage where you might not every be able to workout again or even walk. It all depends on where or what type of pain we are talking about here are just a few examples:

  • Chest Pain-Discomfort in the chest including a dull ache, a crushing or burning feeling, a sharp stabbing pain, and pain that radiates to the neck or shoulder.   • Knee Pain-Pain in or around the knee that may indicate a condition affecting the knee joint itself or the soft tissue around the knee. Quick and Easy Breakfast for Under 500 Calories and 21 Day Fix Approved-Black Beans & Eggs

  •  If you're like me trying to come up with new ideas for breakfast that are tasty, yet still low calorie and healthy, is really hard sometimes. I am a creature of habit and can eat the same thing for days on end usually doesn't bother me, but there comes a time when enough is enough and I need something new and different to eat. 

  • I came across this recipe the other day and I tweaked it a little to fit my taste better, but you might enjoy it just the way it is, so I gave you both versions. Let me know what you think!!

  • QUICK & EASY BREAKFAST<500 CALORIES
  •      Black beans, Canadian Bacon, and Eggs!

  • Prep Time: 5 minutes 
  • Cook Time: 7 minutes 
  • Total Time: 12 minutes 
  • Servings: 

INGREDIENTS

  • 1 can (15 oz) black beans
  • 3 tsp hot sauce
  • 2 tsp all natural organic butter
  • 4 slices Canadian bacon
  • slices Ezekiel bread 
  • 4 eggs large eggs
  • Freshly ground pepper 

DIRECTIONS

  1. Mix beans and sauce in microwave-safe bowl. Cover and microwave on high for 2 minutes. Set aside. (What I do is put the beans and hot sauce in a mini food processor and kinda make like my own version of "re-fried" beans, but they are not fried or re=fried, lol. I have issues with textures and I don't like beans just out of a can warmed up the texture is weird???)
  2. Heat large skillet over medium heat and add bacon. Cook for 1 minute on each side until browned. 
  3. Toast bread and arrange on 2 serving plates. (I butter each slice with a tsp of all natural-organic butter)
  4. Place 2 slices of bacon on each slice of toast. Top each with a portion of bean mixture, dividing beans evenly between 2 plates. (I dice eat slice of bacon up then wait for it, wait for it...)
  5. Add olive oil to same skillet and carefully crack eggs into skillet, placing eggs next to each other. Once egg whites turn opaque, cover and reduce heat to low. Cook for 4-6 minutes. 
  6. Using spatula, carefully remove each egg from skillet. Top each serving of toast with 1 egg. 
  7. Serve immediately. Add optional toppings, if desired.
I prefer to divide the Mushed-up beans between 2 Ramekins then add 1 fried egg next the diced ham and last the second egg and top with red pepper or more hot sauce (cheese is good too, but I don't want to waste the calories;) You can also add vegetables in with the layers and salsa is #awesome layered in with this dish. Serve with your Ezekiel bread toasted and buttered with 1 tsp of butter all for dipping in your yummy dish.

LOW CALORIE AND 21DFX APPROVED VEGETABLE EGG CUPS

MINI VEGETABLE EGG CUPS

INGREDIENTS:
Nonstick cooking spray
12 Large Eggs
Sea salt or Himalayan salt (Mineralize)
and ground black pepper (to taste; optional)
1 (10 oz) bag baby spinach, finely chopped
1 medium red bell pepper, finely chopped
2 green onions, finely sliced

GET COOKIN'!
1. Heat oven to 375 degree
2. Lightly coat a twelve-cup muffin tin with spray.
3. Place eggs in a large bowl; whisk to blend. Season with salt and pepper if desired.
4. Add spinach, bell pepper, and onions; mix well.
5. Evenly pour egg mixture into muffin cups.
6. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of cups comes out clean
.

Makes 6 servings, 2 vegetable egg cups each
1-Green 1-Red

21 Day Fix Breakfast Frittata with Swiss Chard, Tomatoes and Parmesan

FRITTATA WITH SWISS CHARD,TOMATOES & PARMESAN

(Swap out chard for your favorite green in this easily-customizable recipe.)
Total Time: 35 min.
Prep Time: 10 min.
Cooking Time: 20-25 min.
Yield: 8 servings
Ingredients:
10 large egg whites (1¼ cups)
6 large eggs
¾ cup nonfat milk
¼ cup shredded Parmesan cheese
Sea salt and ground black pepper (to taste; optional)½ tsp. ground nutmeg
1 Tbsp. olive oil
1 medium onion, chopped
2 cups chopped Swiss chard
Nonstick cooking spray
1 cup cherry tomatoes, cut in half

Preparation:
1. Preheat oven to 350° F.
2. Combine egg whites, eggs, milk, cheese, salt (if desired), pepper (if desired), and nutmeg in a medium bowl; whisk to blend. Set aside.
3. Heat oil in a large ovenproof skillet over medium heat.
4. Add onion and chard; cook for 4 to 5 minutes, or until tender. Turn off heat. 5. Lightly coat sides of skillet with spray.
6. Add tomatoes and egg mixture to skillet.
7. Place skillet in oven. Bake for 20 to 25 minutes or until puffy and set.
Tip: You can use spinach, kale, or other favorite greens instead of the Swiss chard. You can also mix the greens for a total of 2 cups.

QUICK & EASY 21 DAY FIX BREAKFAST RECIPE-SHAKSHUKA

Me, I usually don't like to eat breakfast I prefer to eat later in the day, but every now and then I wake up hungry wanting a hardy breakfast. This D-lish recipe is filling and has "stick-to-your-ribs" power, so it is an
awesome breakfast choice. You can eat it as is or if you need some carbs to fuel your fire in the morning you can serve it over brown rice, whole-grain pasta, a slice of Ezekiel bread, or with slices of whole wheat pita wedges for a low-calorie meal packed with protein and lycopene.

SHAKSHUKA 

INGREDIENTS
1-Tbsp coconut oil
21 Day fix, Cize, shakeology, eat healthy, eat better, lose weight
Purchase 21 Day Fix

1-diced onion
1-minced garlic clove
1-diced green pepper
2-cans diced tomatoes 
2-Tbsp tomato paste
6-large eggs
1-tsp each paprika, chili powder, cumin
Pinch cayenne
Salt and pepper to taste.

GET COOKING

Sauté onions and garlic in coconut oil for 2 minutes. Then add a diced green pepper and sauté for an additional 5 minutes. Next, add two cans of diced tomatoes and 2 tablespoons tomato paste. Season with 1 teaspoon each chili powder, cumin, and paprika. Add a pinch of cayenne, if desired. Season with salt and pepper, stir well to combine and bring the sauce to a simmer (keeping it over medium heat). Crack six eggs directly into the skillet, then cover and cook for 10 minutes.
Makes 6 servings 1-Red 1-Green (just the tomato mixture and 2 eggs, if you add rice, bread, etc. you'll need to add those containers)

The Number One Dieting Mistake That is Ruining Your Weight Loss Efforts

How many times have you gotten up in the morning feeling good, you're upbeat and happy, ready to take on the day then you go to the bathroom to do your morning routine, which includes stepping on the scale, and when you see the number on the scale isn't the number you were wanting all that happy goodness is knocked right out of you? Does this ever happen to you?

You know that you were good all week long when it comes to your dieting efforts. You made healthy choices with your foods, you stayed with in your calories, containers, points, whatever limits and didn't over indulge. You worked out everyday and you gave it your all during workouts there was nothing left in the tank when you were done-BAM YOU KILLED THOSE WORKOUTS!

Why, sacrifice eating all that delicious food while everyone else is enjoying it, if this is the results you're going to get, right? WRONG!
Many, many times it will take a while before all our hard work shows up on the scale and even when it does it might not be the number we are looking for, because losing weight and getting healthy is more than a number on a scale.  You can't let the number on the scale mess with your mind, your confidence. Don't let a number on a scale defeat you and take away your hope of having a healthy, active life of abundance.

You have to have NON-SCALE VICTORIES. Non-scale victories are other ways of judging how effective your dieting and weight loss efforts are and really we aren't dieting we are making lifestyle changes, because these eating habits are going to be permanent changes not just quick fixes to get immediate results. We want permanent results, right?depression, hypothyroidism, fitness
So, many factors effect the number on the scale that make it a poor way to judge how well your weight loss and fitness program is working. 
For example:
  • Did you drink a large amount of water before bedtime?
  • Are you constipated?
  • Did you eat a large amount of salt/sodium yesterday?
  • Are you weighing at the same time everyday?
  • Are you wearing the same clothes?
  • Are you doing a fitness program that is geared towards building muscle? (Muscle weighs more than fat, so you may be losing fat but gaining muscle, which keeps the number on the scale from changing).
All these things make using the scale a bad way of judging your weight loss success. Instead, try using some of the things listed above to measure your success. The whole point of losing weight and getting fit is so you feel better and can live a healthy, active and independent life until the day you die. Yes, you want to look good too and you will when these non-scale victories are accomplished. With these victories your confidence will grow and the way you present yourself and treat your appearance will change too and that my friend is beautiful.

22 MINUTE HARD CORPS SUMMER STRONG CHALLENGE GROUP

It's hump day!!! It's also week one of my  22 MHC Summer Strong Challenge group and man I must admit I've been struggling the past couple of days. I had already completed the 8 weeks of 22 MHC plus Hell Week, but I loved it so much I decided to do a 4 week challenge group, so others could see how awesome the program is too. My diet and workouts were on spot then along comes Nurse's week and everything went to crap. A co-worker's wife cooked up a huge spaghetti meal and 2 retired nurses brought in all kinds of goodies, so for 4 nights straight we did nothing but eat and eat junk at that.

The sugar overload has caused me to struggle during my workouts I can really feel the difference. But today I feel awesome, so hopefully all the crap is out of my system and I can get back on track to losing the weight! I'm so excited to help these ladies in my challenge group find their path to success and they all seem so fired up and ready to KILL IT!!! Eating the right foods in the right combination and the right portions is the key to success. I know, I know it sounds complicated, but Autumn Calabrese (creator of the 21 Day Fix) figured it all out for us and with her simple to follow portion fix meal plan you can't go wrong, as long as you follow the meal plan ;)


I tell my challengers to take Sundays and plan out their meals for the week. Then go shopping for the foods they'll need. Next come home and prep those veggies, wash 'em, cut them up, measure them out into easy to grab containers, so when you're in a hurry you won't have any excuses not to eat healthy. Make some dishes up a head of time and freeze them, for the same reason I just mentioned. Success is in the planning and if you don't have a plan then you're planning to fail.

Definitely plenty of food, but that doesn't mean I won't be "Jones-ing" for junk food, right? So, if you're like me then you'll be going through a few days of detox just like any other addict who gives up their vice. But after about the 3rd or 4th day you should be through the withdrawal and with the help of Shakeology you'll start to feel a whole lot better. Shakeology has been a game changer for me and my weight loss it is what got me to my goal weight last time (I lost 175 lbs, I was literally half the person I use to be, cray cray, right?). I hate vegetables and it takes care of that for me-YEAH!

Eating right is only part of the equation the other part is your fitness a.k.a. working out. This is the part that a lot of people dread and they can find the most excuses for not doing. I personally have always enjoyed working out, so I look forward to my workouts they are actually therapeutic for me. Checkout  the Mental Health Benefits of Working Out . Since I have a specific goal in mind, To look awesome by Summit July 28th, & I've already done one round of 22MHC I've decided to do a Hybrid of my own design with The Master's Chisel program to help me develop more lean muscle, change the landscape of my body, and get better definition.


When it comes to your workouts you have to schedule them on your calendar just like you do any other appointment, because they are just as important, if not more important. **The workouts don't have to be at the same time everyday, but they do need to be scheduled at a specific time everyday.**

Here's my workout schedule for the week:

Thursday: Chisel Agility 9:00 am/Resistance 1    6:00 pm 
Friday: Total Body Chisel 9:00 am/ Cardio 2    3:30 pm        
Saturday: Chisel Cardio 3:30 pm/ Resistance 1 4:00 pm 
Sunday: Chisel Balance 3:30 pm/ Cardio 1 4:00 pm
